These tasty bites made with oats, peanut butter and bananas make a great snack. So if you have any over ripe bananas why not make these sweet bites


Makes about 12-15 slices / Can be made vegan with vegan spread

Ingredients
• 2 cups of oats
• 3 tbs (1/2 cup) butter or olive spread
• 1/4 cup of maple syrup
• 1 cup of chopped dates
• 2 tbs peanut butter – propernutty peanut butter has been used in this recipe
• 100g chocolate of your choice- sea salt dark chocolate has been used for this recipe
• A handful of flaked almonds
• 3 ripe bananas

Method
1 Add the oats to a bowl, melt the butter along with the maple syrup in a pan and pour into the oats and combine.
2 Add the oats to a square baking tin, spread and pop into the freezer to set.
3 Add a little hot water to soak up the dates to soften for a few minutes and pour out any remaining water.
4 In a separate bowl, mash the bananas, add the peanut butter and dates and mix until combined. Alternatively blitz in a blender.
5 Take the oats out of the freezer and spread the banana mixture covering the oats and pop back in the freezer to set.
6 Finally melt the dark chocolate and once the banana mixture has set slightly, drizzle the chocolate and sprinkle with flaked almonds on top.
7 Pop back into the freezer to completely set. Slice the bars into squares and keep in an air tight container. These bites are best kept in the freezer, when you want to have a bite take them out of the freezer 30 minutes before. Alternatively they can be kept in the fridge, they will be more gooey.
