Vegan/ Serves 6-8/ This recipe contains starlinocherries to make this cake
Ingredients
• 5 medium juicy ripe plums roughly sliced
• 1 tsp vanilla extract
• 2 tbs cherry juice- I used starlinocherries can use tinned cherries
• 1 & 1/4 cups of self raising flour
• 1 tsp bicarbonate soda
• 1 tsp baking powder
• 1 cup desiccated coconut
• 1/4 cup caster sugar
• 140 ml of milk- I used almond milk
• 1/3rd cup of vegetable oil
• 1/2 cup of oats- the oats give a dense taste
Method
1 Pre heat oven 180 degrees, gas mark 4.
2 In a pan stew the plums along with 2 tbs of cherry juice and vanilla until softened.
3 In a large bowl add the flour, bicarbonate soda, baking powder, sugar, coconut and oats and mix together.
4 Add the almond milk and oil into the dried ingredients and mix until a smooth batter is formed.
5 Add some of the fruit mixture into the batter and fold in.
6 Grease a round cake tin (8 inch) and add the remaining fruit mixture at the bottom (spread evenly) and pour over the cake batter on top.
7 Drizzle some of the cherries and juice over the top of the cake batter.
8 Bake the cake for 30 minutes until risen and an inserted tip of the knife comes out clean. Allow to slightly cool.
7 Serve warm with custard, this cake tastes great the next day slightly warmed and served with yoghurt or custard.
