Makes 12 / Vegan/ This recipe contains rollagranola to make these delicious cups
• 1 cup of granola
• 3/4 cup pumpkin seeds
• 1/4 cup desiccated coconut
• 2 tbs maple syrup
• 1 tbs smooth peanut butter
• 1/2 cup of melted coconut oil
• 1.5 cups of frozen berries
• 3 tbs maple syrup honey
• 2 slabs of dark chocolate
1 Blitz the granola, seeds, and coconut to a crumble like texture, add the coconut oil, syrup and peanut butter and combine.
2 Line a muffin tray with cases, add a spoonful of mixture into each case, spread and flatten with tip of fingers, pop into the freezer to set for a few minutes.
3 Add the berries in a pan and stew until softened, mix in the syrup and blitz until smooth.
4 Pour the berry mixture over the granola base and pop into the freezer until set. The berry mixture takes a little longer to set.
5 Melt the dark chocolate and finally pour over the jam topping, pop into the freezer until granola cups are set- About 1-2 hours.
6 Keep these in the freezer, when you want to eat them take them out an hour before you eat to slightly defrost.
