Why not whip up these mini fritter style burgers full of vegetables, flavour and spices, served with a spicy coriander chutney. Whether you serve these as a starter/snack, add them in a wrap or as part of a salad bowl for lunch or dinner, they are a nutritious bite


Vegan/Serves 7

Ingredients

•  1 courgette grated
•  1 carrot grated
•  1 red onion chopped
•  1 green chilli chopped
•  2 tbs gram flour (chickpea flour) can use plain flour
•  2-3 tbs breadcrumbs
•  1 tsp madras curry powder
•  1 tsp chana masala- can use any other spice of your choice
•  Squeeze of lime
For the coriander chutney:
•  1 bunch of coriander
•  2-4 garlic cloves
•  1 tbs apple cider vinegar
•  1 tsp whole grain mustard
•  1 tsp chilli paste
•  1/2 lemon juiced
•  2 tbs olive oil

Method

1 Squeeze the excess water from the courgettes and then place in a large bowl along with the carrots, onions, chilli, gram flour and spices and mix.
2 Add the breadcrumbs and lime, season with salt an pepper and combine mixture.
3 Using your hands make round shaped patties and flatten. If the mixture is slightly wet add more breadcrumbs or flour.
4 Heat a large frying pan with a little oil and cook the fritters for a few minutes on each side until golden. These fritters can also be baked in the oven.
5 To make the chutney, simply blitz all the ingredients until smooth, season with some salt and pepper.
6 Serve fritter burgers with coriander chutney, they taste great the next day when heated under the grill.
