Why not try this delicious fruit loaf makes a great bake for an afternoon tea, made with fresh fruits, oats and a great way to use up any left over ripe fruit


Vegan/Serves 6-8

Ingredients
• 1 cup of plain flour
• 1 cup of oats
• 1/2 cup of wholemeal spelt flour
• 1 tsp of baking powder
• 1/2 tsp of bicarbonate soda
• 3/4 cup of almond milk- can use milk of your choice
• 1/2 cup of vegetable oil
• 1/2 cup of maple syrup
• 6 fresh apricots halved
• 2 ripe plums halved- can use any fruit of your choice
• 1 tsp of ground mixed spice
• Sprinkling of brown sugar

Method
1 Pre heat oven to 180 degrees Celsius, gas mark 4.
2 In a pan stew the plums, apricots, spice, sugar and cinnamon with a splash of water until softened and juicy.
3 In a large bowl add the flours, baking powder, bicarbonate soda and oats and combine.
4 Add the milk, oil and syrup in a measuring jug and whisk, pour this mixture into the dry ingredients and mix until smooth batter.
5 Add half of the stewed fruits into the loaf batter and combine.
6 Pour the cake batter into a greased loaf tin and top the middle of the batter with some of the stewed fruits.
7 Bake in the oven for about 45 minutes until cooked, insert a skewer to check if cake is cooked.
8 Serve the loaf with custard, yoghurt or ice cream. This loaf tastes great the next day slightly grilled with some peanut butter, yoghurt and stewed fruit on top- makes a good breakfast.
