Ingredients
• 1 large sweet potato cut into rounds
• Handful of chopped nuts
• Handful of dried cranberries
• 1 tsp dried mixed herbs
• 1/4 tub of cream cheese spread or vegan cheese spread
Method
1 Pre heat oven 180 degrees gas mark 4.
2 Brush the potato rounds with some olive oil, place on a baking tray and bake in the oven for about 30 minutes.
3 Turn the potatoes half way through and cook until crisp and golden.
4 Allow rounds to cool, spread with cheese, top with walnuts and cranberries.
