When it comes to using up those overripe bananas, they certainly don’t go to waste and it is either banana bread, muffins or some sort of dessert to make the most of them

These muffins are a great bake to try with your kids, a good breakfast option and a delight to eat


I love whitworths‘ range of dried fruit and nuts, which give that extra texture and sweetness. Try adding some cranberries or any choice of your favourite dried fruits and nuts to this recipe

Ingredients
• 2 large ripe bananas
• 2 cups of plain flour
• 3/4 cup almond milk or non dairy milk
• 1/3 cup vegetable oil or coconut oil
• 1 tbs peanut butter
• 1/4 cup mixed dried walnuts and chopped dates-optional
• 1/4 cup chocolate chips or cacao nibs
• 1 tbs baking powder
• 1/4 tsp salt
• 1 tsp vanilla extract
• 1 tbs apple cider vinegar
• 2 tbs cacao powder-optional

Method
1 Pre heat oven 180 degrees gas mark 4, add the muffin cases to your muffin pan and lightly grease the cases with some oil.
2 In a large bowl mash the bananas, add the milk, vanilla, oil, vinegar and nut butter and whisk together.
3 Add the flour into the wet mixture, add the baking powder and salt on top of the flour and mix using a spatula until combined.
4 Fold in the chocolate chips and dried fruit and nuts.
5 Take half the batter and mix in the cacao powder for the chocolate muffin flavour-optional.
6 Add the batter to the muffin cases until 3/4 full, sprinkle some oats on top and bake in the oven for about 20-24 minutes until golden and risen.
7 Insert a knife in the middle to check if muffins are cooked, allow to cool and keep in an airtight container.
8 I find these muffins taste great the next day when you cut them in half, place them under the grill and add some nut butter.
