• 1 cup of plain flour
• 1/3rd cup oats
• 1 tsp baking powder
• 1 tbs flaxseed mixed with 3 tbs water-1 flax egg
• 1/4 cup vegetable oil
• 1/4 cup maple syrup or honey
• 1/4 almond milk
• 1/2 tsp cardamom powder
• 1/4 cup roughly chopped pistachio
• 1/4 cup dark chocolate chips-optional
1 Pre heat oven 150 degrees Celsius, gas mark 2.
2 In a large bowl add the flour, cardamom, oats and baking powder and mix.
3 Add the oil, milk and syrup to the flaxseed and mix well, add this to the dry mixture and mix until dough forms.
4 Add the pistachio and chocolate chips and gently combine.
5 Make small rounds with the biscuit dough, flatten, place on a greased tray and bake the biscuits in the oven for about 20 minutes.
6 Take the biscuits out of the oven, allow to cool-I double baked these biscuits for another 15 minutes- the texture of these biscuits are shortcake like with a soft and crunchy texture.
