Fancy a cupcake why not try this simple, quick bake with a lemon cream cheese frosting. Using fresh fruit in baking gives a natural sweetness and the flavour combination of these cupcakes hit the sweet spot

• 1 cup of self raising flour
• 2 ripe bananas mashed
• 1 tsp vanilla extract
• 2 handfuls of fresh or frozen blueberries
• 1/2 tsp baking powder
• 1/3rd cup vegetable oil
• 1/2 cup of non dairy or dairy milk
• 2 tbs dairy free or dairy based soft cheese
• 1 tbs lemon juice
• 1 tbs icing sugar

1 Pre heat oven 180 degrees Celsius, gas mark 4.
2 In a large bowl add the flour, baking powder and mix.
3 Add the bananas and vanilla into the dry ingredients and mix.
4 Add the milk and oil and stir until all the batter is combined.
5 Add the blueberries and gently fold, mixture should be a smooth batter.
6 Line your cup cake tin with cup cake cases, add a dollop of the batter into each case-3/4 full.
7 Bake in the oven for 20-25 minutes until golden and cooked.
8 For the frosting simply whip the cream cheese, lemon, icing sugar until smooth.
9 Once the cup cakes have cooled, spread the frosting and top with some grated lemon rind.
