Ingredients
Fruit filling:
• 3 pears peeled and sliced
• 1 cup mixed frozen berries
• 1/2 tsp chai spice – can use mixed spice
• 1/2 tsp fennel and clove spice
• 1 tbs brown sugar or maple syrup
For the crumble topping:
• 1/2 cup plain flour
• 1/2 cup oats
• 1/2 cup desiccated coconut
• 1/2 tsp chai spice – can use mixed spice
• 1 tbs butter or vegan spread
• 1 tbs brown sugar
Method
1 Pre heat oven 180 degrees Celsius, gas mark 4.
2 In a pan add the pears, spice and a splash of water, allow to simmer until softened. Add in the frozen berries and sugar and combine.
3 For the crumble topping add the flour, sugar, oats, coconut and spice in a bowl and mix. Add in the butter and rub with finger tips until crumble texture forms.
4 Using a small square or round baking dish, add the fruit filling to the base followed by the crumble topping.
5 Bake for about 25-30 minutes until golden, sprinkle with flaked toasted almonds and serve with yogurt, custard or ice cream.
