Ingredients-Use the measuring cups and measuring spoons
• 3 ripe bananas – medium-large
• 1/3rd cup vegetable oil
• 1/4 cup milk – I used oat milk
• 2 tsp baking powder
• 1 cup self raising flour
• 1 tsp mixed spice
• 1/4 cup dark chocolate chips
Method
1 Pre heat oven 180 degrees Celsius gas mark 4.
2 In a large bowl mash the bananas, add the oil and mix.
3 Add the flour, baking powder and mixed spice into the banana mixture and mix together.
4 Add the milk and chocolate chips and combine.
5 Grease a small loaf tin and add the batter. I used a round small sandwich cake tin or you can make these into muffins.
6 Top with some sliced strawberries and bake in the oven for about 35-40 minutes, insert a skewer in the middle to check if cake is cooked.
7 Serve warm with yoghurt or ice cream, this keeps well for about a week. Tastes even better the next day when you grill a slice of the cake and add some peanut butter.
