Comfort food o’clock! These are sweet potato jackets with a bean filling – perfect for making the most of leftovers and what’s available

These are so simple and easy and require minimal cooking. You’ll be satisfied all afternoon


Using a combination of pulses from @hodmedods and @merchantgourmet mixed grains @hunterandgatheruk avocado oil and some delish @nushfoods yoghurt. Also making use of tinned food and frozen vegetables which works out cheaper and still nutritious

Ingredients
• 4 sweet potatoes
• 1 tin of chopped tomatoes
• 1 cup of frozen vegetables
• 1 tin of pulses
• 1 garlic clove chopped
• 1 onion chopped
• 1 tsp paprika
• Chilli flakes
• 1 packet of your choice of ready made mixed grains
• Handful of chopped coriander

Method
1 Pre heat oven 180 degrees gas mark 4.
2 Microwave the sweet potatoes until cooked.
3 For the filling, drizzle some oil in a pan, fry the garlic and onions until browned, add the frozen veg, along with the pulses and mixed grains and mix well.
4 Add the chopped tomatoes, paprika, chilli flakes and season well and allow to simmer until thickened.
5 Finally slit the potatoes in half, place on a baking tray, top with the bean filling and bake in the oven for about 15 minutes until golden.
6 Serve with some yoghurt and fresh coriander.
