Why not have a slice of pizza. This is a great simple pizza recipe packed with veggies and plant based protein. The base is made using buckwheat and plain flour and this is a great recipe for any occasion. Why not try making this delicious vegetable based pizza and a great one for kids to get involved in


Ingredients

• 1 cup plain flour
• 1/3rd cup buckwheat flour
• 1/2 cup of luke warm water
• 1 tsp baking powder
• Drizzle of olive oil
• 1/4 tsp salt
• 1 carrot grated
• 1-2 tbs tomato puree
• 2 handfuls of teriyaki tofu – can use chickpeas or cut up veggie sausages instead
• 2 handfuls of grated cheese – can use vegan cheese

Serves 1-2

Method

1 Pre heat oven 180 degrees Celsius, gas mark 4.
2 In a large bowl add both types of flour, baking powder, salt, olive oil and mix.
3 Gradually pour the water and mix until a soft dough forms – can use your hands or a wooden spoon. You may need to add extra water to the dough if it is dry or more plain flour if it is sticky.
4 Knead the dough for 3-4 minutes until soft, roll into a ball and flatten on a floured surface. I rolled this pizza out quite thin, shape it to your preference.
5 Brush some olive oil on to the base, spread the tomato puree, add the carrots, tofu and cheese on top.
6 Bake in the oven for 15-20 minutes until golden.
7 Serve with a side salad and a drizzle of chilli sauce.
