A savoury delight full of goodness. These pancakes are a great way of sneaking in some vegetables and spinach is a good source of iron, vitamin C and folate as well as other nutrients. Not only does it give a vibrant colour but tastes great in these pancakes with a hint of cheese. So whether you have these for breakfast, lunch or dinner they are a hit


Serves 6 vegan and vegetarian friendly

Ingredients
• 2-3 handfuls of fresh spinach leaves
• 1 cup self raising flour
• 1 tbs apple cider vinegar
• 1 tsp baking powder
• 1/4 tsp salt
• 1 cup dairy or non dairy milk – I have used almond milk
• 1-2 handfuls of grated cheese – can use vegan cheese

Method
1 In a large bowl add the flour, salt and baking powder and mix.
2 Add the milk and vinegar to the dry mixture and mix. Next add the spinach and blitz until smooth. I used a hand blender, alternatively use a blender/food processor to blend all the ingredients to a smooth batter. Allow the batter to rest for a few minutes.
3 Add the grated cheese and a dash of black pepper and whisk.
4 Heat a pan with some oil and ladle the batter, cook the pancakes for a few minutes on each side- air pockets will form and pancakes will become light and fluffy.
5 Serve these spinach pancakes with your favourite filling, I have topped mine with a roasted red pepper dip.
