This loaf is ideal for a summer bake, filled with fresh fruit and full of delicious flavours. To really bring out the taste of this cake serve this with teapigs‘ cold brew range of refreshing teas


Serves 6-8, Vegan, this loaf is best served with the Lychee and Rose flavour cold brew teapigs tea

Ingredients
• 2 ripe bananas
• 1 flax egg (1 tbs flaxseed mixed with 3 tbs water)
• 1/2 cup almond milk
• 1/3rd cup rapeseed oil
• 1/4 cup of honey or maple syrup
• 1 tsp vanilla extract
• 1 tbs apple cider vinegar
• 1 cup self raising flour
• 1/3rd cup buckwheat flour
• 1 tsp bicarbonate soda
• 1 tsp baking powder
• 1 chopped plum
• 1 sliced plum for garnish
• 1/4 cup of coconut flakes
• 1/2 cup oats

Method
1 Pre heat the oven 180m degrees Celsius, gas mark 4. Line a loaf tin.
2 In a large bowl mash the bananas, add the flax egg followed by the milk, oil, vanilla, vinegar and syrup and combine.
3 In a separate bowl add the flours, oats, baking powder and soda and mix.
4 Add the dry ingredients into the batter and stir until combined, add the plums and coconut flakes and fold in.
5 Pour the batter into the loaf tin, top with sliced plums and bake in the oven for 35 minutes until golden and cooked through.
6 Switch the oven off, leave in for another 5 minutes and allow to cool, serve with yoghurt or custard. This loaf tastes best the next day slightly grilled with some peanut butter.
