Happiness is a pancake breakfast and these banana pancakes are a great one to whip up. I love a weekend breakfast that involves making a stack of pancakes and adding your favourite fillings. These pancakes are also vegan so why not try these


Ingredients
• 1 cup plain flour
• 1 cup almond milk
• 1 tsp baking powder
• 1 tsp vanilla extract
• 1 tbs apple cider vinegar
• 1/4 cup oats
• 1/4 cup chocolate chips or cacao nibs
• 1 ripe banana mashed
• Pinch of salt

Method
1 In a large bowl add the flour, baking powder and salt and mix well.
2 Add the milk, vanilla, vinegar and banana in to the dry mixture and whisk.
3 Add the oats and chocolate chips, give a mix and allow batter to rest for 10-15 minutes.
4 Add some butter or oil to a frying pan and on a medium heat, ladle the pancake mixture and cook for a few minutes on each side-air bubbles should form.
5 Serve pancakes with your favourite toppings- I have drizzled some smooth peanut butter mixed with some chocolate peanut butter.
