In this recipe I have used products from @tildarice @bluedragonuk @waitroseandpartners
• 1 tin of chickpeas rinsed and drained
• 1 cup of frozen squash
• 1 onion chopped
• 2 garlic cloves minced
• Handful of frozen beans
• 1/4 tin chopped tomatoes
• 1 tsp madras curry powder
• 1/4 tsp turmeric
• 1 tsp garam masala
• 1 chilli chopped
• 1 pack of ready cooked pouch rice
• 1/4 tin coconut milk
• 1 tsp cumin powder
• 1/4 piece of ginger chopped
1 Drizzle some olive oil into the pan, add the onions, garlic and ginger and sauté until browned.
2 Add the tomatoes and cook to a thick paste.
3 Add the chickpeas and squash and add all the spices, mix well and stir in the coconut milk and simmer until thickened.
4 Season the curry well, add more coconut milk if you prefer it more liquid.
5 Microwave, steam or blanch the green beans.
6 Garnish curry with chillies and serve with rice and green beans.
