Energy & truffle balls – a perfect snack and delight to eat. These are made with dried fruit & dusted in different toppings for a colourful finish


I made these using products from @whitworthsuk, @linwoodshealthfoods@meridianfoods, @naturya @wholeearthfoods @montezumaschocs @almondbreezeuk

Ingredients
▪️ 1 cup of cornflakes
▪️ 2 tbs nut butter
▪️ 1 tbs cacao powder
▪️ 1 cup chopped dates
▪️ 1/4 cup almonds
▪️ 1/4 cup sunflower seeds
▪️ 1/4 cup pumpkin seeds
▪️ 1/4 tsp ginger powder
▪️ 1/4 tsp cardamom powder
▪️ 1/4 cup cranberries
▪️ 1 tbs flaxseed

Method
1 Soak the dates in some hot water to soften for about 15 minutes.
2 Add all the ingredients into a food processor/blender and blitz. Ensure you don’t add all the water from the dates otherwise mixture will be too wet and sticky.
3 Check the consistency and add and minus ingredients to your taste.
4 Make into round balls.
5 For the toppings roll them in desiccated coconut, freeze dried strawberries and melted dark chocolate.
6 Keep in the fridge to set
