Why not try these tasty blondies made with chickpeas a source of protein and fibre and a great little snack. I have also added some raspberries for extra texture and flavour


Vegan/Serves 10

Ingredients
• 1 tsp baking powder
• 1 cup of oats- used peanut butter and strawberry flavour oats in this recipe thegreatbritishporridgeco
• 1/2 cup plain flour
• 1/2 cup maple syrup
• 1/2 cup smooth peanut butter
• 1 cup chickpeas rinsed and drained
• 1 cup of fresh raspberries lightly mashed

Method
1 Pre heat oven 180 degrees Celsius, gas mark 4.
2 In a large bowl add the oats, flour and baking powder and mix.
3 In a separate bowl add the chickpeas, peanut butter, milk and syrup and hand blend until smooth. Alternatively use a food processor to blitz the ingredients.
4 Add the wet to the dry and combine to a smooth batter.
5 Pour the blondie batter into a lined greased tray and evenly spread, the mixture will be quite thick.
6 Scatter the mashed raspberries on top of the blondies and make a few swirls with a knife.
7 Bake in the oven for 25 minutes until golden.
8 Allow to cool, cut into small squares and keep in an air tight container.
