• 1/4 cup oats
• 1/4 cup desiccated coconut
• 1/4 cup flaked almonds
• 1 tsp maple syrup or brown sugar
• 1 tbs smooth peanut butter
• 1 tsp coconut oil
• 2 ripe pears peeled and sliced
• 1 tsp mixed spice
• 2 plums cut into halves
1 In a pan stew the fruits with the spice until softened.
2 To make the crumble topping simply toast the almonds, oats, coconut in a pan on low heat and add the peanut butter and sugar and mix until combined.
3 Place a medium sized round cutter on a plate, add the fruit followed by the crumble topping and shape. Carefully remove the cutter and top the crumble with ice cream or yoghurt. I have used coconut yoghurt.
