Chocolate is sometimes all you need – whip up a batch of these dark chocolate nutty vegan brownies made using @montezumaschocs


I also used products from @organictraditions @adunaworld @almondbreezeuk and @lucybeecoconut

Ingredients
• 200g caster sugar
• 150g-200g dark chocolate roughly chopped
• 1/4 cup cacao nibs
• 60ml water
• 1/4 cup cashews roughly chopped
• 80g coconut oil or vegetable oil or vegan spread
• 1/4 tsp salt
• 1/4 tsp baking powder
• 1 tsp vanilla extract
• 2 tbs ground flaxseed mixed with 6 tbs water
• 1/4 cup almond milk
• 125g self raising flour
• 50g raw cacao powder or cocoa powder
• 70g ground almonds
• 1/2 tsp coffee granules

Method
1 Pre heat oven 180 degrees gas mark 4
2 In a large pan melt chocolate, coffee, water and oil on low heat, combine & allow to cool slightly.
3 Mix baking powder, salt, flour, cocoa powder and ground almonds in a bowl.
4 Add the sugar to the melted chocolate and whisk/beat until glossy. Add the flaxseed, vanilla, cacao nibs, nuts and flour mixture into the pan of melted chocolate and stir until all combined. Add the almond milk and mix.
5 Pour mixture into a greased baking tin and flatten slightly. Bake brownie mixture in the oven for about 45 minutes. Insert a skewer to check if brownie comes out clean. Cook longer if required.
6 Allow to cool, cut into large squares and serve cold or warm with some @coyo_uk coconut yoghurt.
