Ingredients
• 100g self raising flour
• 50g caster sugar
• 55g butter (can use vegan spread)
• 1/3rd cup chocolate chips or cacao nibs
• 1/2 tsp cardamom powder
• 1/2 tsp chai spice – optional

Method
1 Pre heat oven 170 degrees Celsius, gas mark 5.
2 Rub the flour, sugar and butter in a large bowl until a dough is formed, if the mixture is dry add a splash of milk, if the mixture is slightly wet add a little more flour.
3 Add in the chocolate chips, shape the dough into a sausage shape and allow to set in the fridge for about 15 minutes.
4 Grease a tray, cut the dough into rounds, gently flatten with your finger tips and place on the tray. If you want a more crunchy texture flatten the biscuits so they are slightly thinner, if you want a more shortcake texture cut into thick rounds.
5 Alternatively roll out the dough and use cutters to make a round shape.
6 Bake in the oven for about 15 minutes until golden brown, allow to cool and keep in an airtight container. Great dipped in some milk or tea.
