Banana, almond, date and walnut muffins naturally sweetened with dried and fresh fruit and a great muffin recipe to try. Why not bake a batch of these and make it your own by adding your favourite fillings. This is a great snack and breakfast option


Vegan, Serves 12

Ingredients
•  1 cup of plain flour
•  1 cup of oats
•  1 tsp of baking powder
•  1 tsp of bicarbonate soda
•  1 cup of flaked almonds
•  1 flax egg
•  1 tbs apple cider vinegar
•  3/4 cup of almond milk
•  1/2 cup of vegetable oil
•  1/2 cup of chopped dates and walnuts
• 1/2 cup of sultanas- optional
•  1/4 cup maple syrup- optional
•  2 ripe bananas

Method
1 Pre heat oven, 180 degrees Celsius.
2 Add flour, baking powder, bicarb, oats and almond flakes to a large bowl and mix.
3 In a another bowl mash the bananas, add the flax egg, almond milk, oil and vinegar and mix.
4 Pour the wet into the dry ingredients and combine. Add all the dried fruit and nuts and combine to a smooth batter.
5 Line a muffin tray with muffin cases and add a tablespoonful of batter to each case until just under 3/4 full.
6 Bake the muffins for about 20 minutes until golden, switch of the oven and leave in for another 5 minutes.
7 Serve the muffins warm, or grill the next day with nut butter.
