Vegan / Serves 4
Ingredients
• 3 courgettes sliced
• 1 cup frozen peas
• 1 white onion chopped
• 1 low salt stock cube
• 2 cloves garlic chopped
• 1/4 piece ginger grated
• 1 tsp garam masala
• 1 tsp cumin powder
• 1 tsp paprika
• 1 tsp cayenne pepper
• 1 pint water
• 2 tbs coconut cream or milk
• 1/2 lime sqeezed
• A handful chopped coriander
• A handful mixed seeds
Method
1 In a large pan, drizzle some olive oil and saute the onions, garlic and ginger until softened.
2 Add the courgettes, peas and saute, add all the spices and combine.
3 Mix the stock cube in a jug with a boiling water and pour into the soup mixture and simmer on a low heat until thickened.
4 Stir in the coconut cream, season with salt and pepper, add more spices if required. Blitz the soup until smooth, add more water if soup is slightly thick. Squeeze in the lime and combine.
5 Pour the soup in a bowl, garnish with coriander and seeds and serve with crusty bread.
