Ingredients
• 1 tin of chickpeas
• 1 pack of mixed peppers
• 1 large red onion sliced
• 2 garlic cloves chopped
• 2 large aubergines sliced into rounds
• 2 courgettes sliced
• 2 large tomatoes roughly chopped
• 1/4 tin chopped tomatoes
• 1 tsp mixed dried herbs
• 1 tsp paprika
• 1 tsp dried chilli flakes
• A handful of breadcrumbs-optional
• A handful of grated cheese-optional
Method
1 Heat a large pan with some oil, add your onions and garlic and saute.
2 Add all the vegetables and mix well, cook on a medium heat until softened.
3 Add the chickpeas, chopped tomatoes, paprika, chilli flakes, herbs and season with salt and pepper and simmer for about 10-15 minutes until mixture thickens.
4 Garnish with breadcrumbs and cheese.
5 Great served with some rice, alternative grains or bread.
