▪️ 2 cups of pasta
For the Pesto:
▪️ 1 bunch of basil
▪️ 2 cloves of garlic
▪️ 2 handfuls of cashews
▪️ Squeeze of lemon
▪️ 1 tsp chilli paste
▪️ Drizzle of olive oil
1 Boil the pasta in a pan of water, cook until tender, drain and set aside.
2 For the pesto whiz all the ingredients and season with salt and pepper.
3 Mix the pesto into the pasta and top with chilli flakes. Starchy carbohydrates such as pasta should make make up a 1/3rd of the foods we eat, why not include it rather than exclude this important food group.
