These mince pies are quick to rustle up and I love the flakiness of using filo pastry. Mince pies are a real treat especially around Christmas and you can use any filling especially a spiced fruit filling goes down well


Ingredients 
• 1 pack of filo pastry sheets
• 2-4 tbsp butter/vegan spread
• 4 red apples grated
• 1 cup of mixed peel/dried fruit
• ¼ cup of dates
• 1 tsp cinnamon
• 1 tsp mixed spice
• 1 tsp vanilla extract
• 1 large orange zested and juiced
• ¼ cup flaked almonds
• 2 tbsp of maple syrup or honey

Method
1 Pre heat oven 180 degrees Celsius, gas mark 4.
2 Lightly grease a muffin tray.
3 Lightly brush each filo sheet with melted butter or spread, layer 3 filo pastry sheets on top of each other and cut into large squares, enough to fill a muffin case.
4 Place the filo sheets into each muffin hole and gently press down – allow the sheets to overlap.
5 In a pan, add the apples, dates, mixed fruit, spices, honey, vanilla, orange zest and juice and simmer on a low heat until liquid has absorbed – about 15-20 minutes.
6 Place a spoonful of mixture into each filo case and bake in the oven for about 10-15 minutes minutes until golden and crisp.
7 Take out of the oven, spray some gold dusting and sprinkle some flaked almonds on top of the filo mince pies. Great served with ice cream/cream.
