• 1 & 1/4 cups desiccated coconut
• 1/4 cup honey or maple syrup
• 1/4 cup coconut oil
• 1 cup blueberries
• 1/4 cup honey
• 1/4 cup chia seeds
1 In a pan add the coconut and coconut oil and mix until melted, turn of the heat and add the syrup and mix until combined. Set aside and allow to cool.
2 For the blueberry filling simple stew the blueberries in a pan until softened, add the chia seeds and honey and mix well. The blueberry filling should become a jam consistency.
3 Line a tray with cupcake cases and add about 1 tbs of coconut filling into each case, flatten with your fingers.
4 Add the blueberry filling on top and pop into the freezer until set.
5 I also added some peanut butter and melted chocolate for some of the coconut fillings.
