These 5 ingredient vegan friendly cookies/biscuits are simple to make and have a great texture and crunch. Oats are a good source of fibre as well as other nutrients such as magnesium. They are also low in saturated fats and contain some protein. Why not include oats for your breakfast keeping you fuller for longer and they are great in cakes and bakes


This is a vegan bake and I used thegreatbritishporridgeco chocolate flavoured oats which are gluten free and the texture and flavour is great.

Serves 8

Ingredients

• 2 cup of chocolate flavoured oats or plain oats
• 1/4 cup of maple syrup or honey
• 1/4 cup of coconut oil or butter/vegan spread
• 1/4 cup smooth peanut butter
• 1 tbs cacao powder or cocoa powder

Method

1 Pre heat oven 180 degrees Celsius, gas mark 4, line a tray with grease proof paper.
2 In a large bowl add the oats and cacao powder and mix.
3 In a pan on low heat add the coconut oil, peanut butter and syrup and stir until a smooth consistency.
4 Add the wet ingredients into the oat mixture and combine.
5 Using your hands shape the oat mixture into rounds and flatten or scoop a tbs of mixture. Place on a baking tray and bake in the oven for 12-15 minutes. Allow to cool and keep in an airtight container.
