Pancakes are cheap, quick and easy to make also using your common store cupboard ingredients!
Ingredients
• 1 cup of plain flour
• 1 cup almond milk or any milk of your choice
• 1/ 4 tsp salt
• 1 cup of wholemeal flour
• 1 tsp baking powder
• 1/4 oats
• 1 tsp cinnamon
• 1 tsp vanilla extract
• 2 ripe large bananas sliced
• 1 tbs butter or coconut oil melted
• 1 tbs brown sugar
• 1 tbs desiccated coconut
Method
1 In a large bowl add the flour, oats, baking powder, cinnamon and salt and mix.
2 Make a well in the middle and gradually add the almond milk and whisk until smooth batter is formed. Add more milk of mixture if thick. Allow the pancake mixture to set for 10 minutes.
3 To make the caramelised bananas, using a frying pan heat the sugar over a moderate heat and allow to caramelise- amber colour (be careful not to burn sugar).
4 Take the pan of the heat and stir in the coconut oil.
5 Add the bananas and return to the heat and gently shake the pan, add the coconut and toss until bananas are coated.
6 To make the pancakes, heat the pan with some oil, ladle a spoonful of batter and flatten to a medium sized circle. Cook on a few minutes on each side, air pockets should form.
7 Stack the pancakes, top with bananas and drizzle some honey or maple syrup.
